Crispy Flounder topped with Sweet & Spicy Apricot, Peach & Caramelized Shallot Butter Sauce

Serves: 4
  • 1/3 Cup  cornstarch
  •  sea salt to taste
  •  ground red pepper, to taste
  • 1 Tbl.  vegetable oil
  • 6 Oz.  flounder fillets - 4 each
  • 1/4 Tsp.  vegetable oil
  • 1/4 Tsp.  garlic, fresh, chopped
  • 1/4 Cup  white wine
  • 4 Tbl.  sweet & spicy apricot peach & caramelized shallot marmalade, prepared
  • 4 Oz.  butter or butter blend, unsalted & cut into cubes
A crispy filet of flounder coated with a sweet & spicy stone fruit and carmelized shallot butter sauce. This dish can be prepared with butter or a good quality butter blend.

Prep Time: 30 mins - 1 hour

Cooking Directions

  • To makd the fish: Combine first 3 ingredients in a large shallow dish; stir well
  • Add fish, skin side down to coat
  • Heat the tablespoon of oil in a large nonstick skillet over medium heat until hot
  • Add the fish skin-side down and cook 2.5-3 minutes on each side until fish flakes easily with a fork
  • To make the sauce: In a sauce pan add a small amount of oil and saute the garlic until tender
  • Add white wine and reduce by 3/4
  • Add marmalade and bring to a simmer
  • Stir in the cold chunks of butter slowly
  • Once the sauce is completed place over cooked fillets on plates and serve
